Valor Hospitality is seeking a Line Cook to support daily kitchen operations for guests and hotel clientele at the Birmingham, AL property. This role focuses on consistent food preparation, station coverage across the line, and safe, sanitary handling practices that protect quality and the dining experience.
Position Overview
The Line Cook prepares culinary items that reflect the hotel’s standards for appearance, quality, and overall dining experience. Responsibilities include daily preparation across the pantry, fry stations, or other assigned kitchen areas, following production requirements while maintaining a safe and sanitary work environment.
Essential Job Function
- Prepare food of consistent quality following recipe cards, use records, production and portion standards, and per-order specifications.
- Start items intended for advance preparation, ensuring production does not exceed estimated needs.
- Track and remember multiple orders, assembling them accurately to match guest and order requirements.
- Work all stations on the kitchen line, including broiler, sauté, fry, pantry, and expediter stations.
- Date all food containers and rotate items according to SOP, keeping all perishables at proper temperatures.
- Check pars for shift use, determine necessary preparation, perform freezer pulls, and set up the line for service.
- Note any out-of-stock items or possible shortages, and assist in keeping the buffet stocked.
- Return unused food to designated storage areas for the next shift, covering and dating all perishables.
- Assist with plans and actions to correct food cost issues, controlling food waste, loss, and usage.
- Perform other duties as assigned, requested, or deemed necessary by management.
Reporting Structure
This position reports to the Executive Sous Chef, Executive Chef, and Food & Beverage Director.
Requirements
- High school education or equivalent experience.
- Culinary certificate or degree preferred.
- Six months to 1 year in a food and beverage services environment or establishment.
- Strong knowledge of operating industrial-sized ovens and cooking ranges.
- Knowledge of preparing different types of cuisines, relishes, soups, and salads.
- Basic understanding of professional cooking and knife handling skills.
- Knowledge of safety, sanitation, and food handling procedures.
- Manual coordination to punch buttons, grasp items in hand, and carry containers loaded with food and liquids.
- Ability to read, speak, and understand English.
- Ability to lift, push, and carry 20 to 40 lbs.
- Ability to stand continuously for long periods of time.
- Ability to communicate information and hotel services to management, staff, and guests.
