Job Description

This onsite banquet setup role in Buffalo, NY focuses on arranging, serving, and breaking down banquet events with safety and guest service in mind.

Responsibilities

  • Read BEOs and identify equipment needed to set up each function.
  • Set tables in the assigned area with correct layout and equipment.
  • Prepare buffets with presentation and pre-event table prep.
  • Maintain neat buffet stations during guest service per established policies.
  • Use proper in-room clearing and aisle tray breakdown for buffet or other special service configurations.
  • Assist Banquet Captain with setup and breakdown of buffets and other service tables/equipment.
  • Greet guests and provide service in line with food and beverage policies.
  • Complete event-specific paperwork.
  • Perform all required side work during and after events.
  • During downtime, organize and stock products or assist with next day preparation.
  • Return and sanitize all equipment to designated areas; keep banquet spaces tidy.
  • Dispose of buffet leftovers properly.
  • Coordinate with Chef on handling leftover plated and buffet items stored in hot boxes or coolers after events.
  • Label, date, and store any saved food properly.
  • Return unused equipment to designated storage areas.
  • Ensure banquet areas are neat and ready for the next day.

Requirements

  • High school diploma or equivalent.
  • Experience with Marriott, Hilton, IHG, Wyndham or Hyatt operations and standards.
  • Solid knowledge of catering and food service to perform non-repetitive analytic tasks.
  • Knowledge of policies and procedures with the ability to determine appropriate actions.
  • Supervisory or management capabilities.
  • Strong oral and written communication skills.
  • Moderate hearing to hear timers and communicate with staff.
  • Good vision to ensure proper food preparation.
  • Moderate speech communication skills for staff interaction.
  • Moderate reading comprehension and literacy to understand BEOs.
  • Physical ability to lift, push, pull, and carry heavy items (approximately 75% of the time).
  • Occasional bending (5-10 times daily) to access lower ovens.
  • Full mobility and ability to travel 30-50 feet regularly.
  • Stand for up to an hour at a time during prep or plating, several times daily.
  • Passion for people and service.
  • Strong interpersonal communication with guests and colleagues.
  • Reading and writing for paperwork, logging issues, requests, and updates.
  • Basic math skills for cash handling.
  • Problem-solving, reasoning, motivating, and training abilities.
