Chef de Cuisine
Job Description
In this role, you will lead the daily operations of The Commoner, the signature restaurant at Kimpton Hotel Monaco Pittsburgh. Working closely with the Executive Chef, you will help deliver consistent, high-quality dishes, support culinary innovation, and guide the kitchen team to create an exceptional guest experience.
Key Responsibilities
- Supervise and mentor chefs, cooks, and kitchen staff to maintain high culinary standards and strong food safety practices.
- Support the development and execution of innovative, seasonal menus that reflect regional flavors and current culinary trends.
- Monitor food quality, consistency, presentation, and production flow throughout service.
- Manage inventory, food storage, and kitchen cleanliness while ensuring compliance with health and safety regulations.
- Step into the Executive Chef role as needed and collaborate on broader kitchen operations and strategy.
- Provide hands-on leadership with a focus on creativity, hospitality, and day-to-day service execution.
Required Qualifications
- Education: High School Diploma or equivalent; culinary school or formal apprenticeship preferred.
- Experience: Minimum 2 years as a Chef de Cuisine or Executive Chef, or 3+ years as a Sous Chef in a high-volume upscale restaurant.
- Advanced knowledge of international and domestic cuisine, food handling procedures, and modern cooking techniques.
- Proficiency in sautéing, grilling, cold food preparation, sauce making, and knife skills (including julienne and brunoise).
- Proven culinary leadership with strong organization and an understanding of fine dining standards.
- Collaborative working style, professionalism, strong communication skills, and the ability to perform in high-pressure situations.
- Physical capability to lift up to 50 lbs., work in high-temperature environments, and remain on your feet for extended periods.
- Flexibility to work evenings, weekends, and holidays as needed.
- ServSafe: Certification required (or willingness to obtain).
