Utility Steward
Job Description
The Utility Steward supports back-of-house operations at Potawatomi Casino Hotel in Milwaukee, Wisconsin (onsite), helping maintain clean, safe, and sanitized kitchen environments. This role operates dishwashing equipment, manages dishware distribution, and ensures compliance with internal controls, policies, procedures, and regulations in a fast-paced setting.
Key Responsibilities
- Load dirty dishes, glassware, and utensils into racks and dishwashing machines; inspect all items after washing and rewash as needed.
- Operate and maintain dishwashing machines, including cleaning and draining the equipment.
- Distribute clean dishware and utensils to assigned venue(s).
- Remove, sort, and dispose of trash as assigned in accordance with established guidelines.
- Maintain clean, safe, and organized work areas, including floors, walls, and counters; support ongoing sanitation practices and ensure team members follow sanitation procedures and food guidelines.
- Assist with maintaining temperature and breakage logs.
- Perform all duties in full compliance with departmental Internal Controls, policies, procedures, and regulations.
- Complete other duties as assigned.
Required Qualifications
- High school diploma or equivalent; 6 months of related experience is preferred.
- Ability to achieve ServSafe certification within 90 days.
- Ability to maintain discretion when handling confidential information.
- Ability to interact with guests and team members professionally.
- Ability to work irregular hours and extended shifts, including late nights, early mornings, weekends, and holidays.
- Ability to perform physically demanding tasks while frequently talking, hearing, standing, sitting, walking, climbing, balancing, stooping, kneeling, crouching, and moving throughout the property for prolonged periods.
- Frequent use of hands to handle or feel objects, tools, or controls, and reaching with hands and arms.
- Ability to lift, carry, push, pull, or move objects up to 20 pounds regularly and up to 60 pounds occasionally with assistance.
- Must wear all required Personal Protective Equipment (PPE) while performing job duties.
- Specific vision abilities required, including close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus.
Working Conditions
- Noise level is usually moderate to loud; noise increases when working on the casino floor.
- The facility is not smoke free.
- Work occurs near moving parts and extreme noise, including kitchen equipment; tasks may take place in hot environments (near ovens, cooktops, and open flames) and cold environments (freezer/production prep kitchen areas).
- Exposure to common allergens is possible, including peanuts, tree nuts, eggs, soy, dairy products, seafood, shellfish, and gluten.
- Use of chemical cleaning products is required.
