Job Description

Competitive pay and a team-focused environment await at Estancia La Jolla, A Noble House Hotel in La Jolla, CA (onsite). As a Stewarding Manager, you will lead daily stewarding operations across kitchens, bars, and service areas while helping keep standards consistent and guests supported by clean, well-prepared back-of-house spaces.

This role is responsible for directing the stewarding team and ensuring sanitation and cleanliness are maintained throughout the Food and Beverage areas. You will also manage staff workflow, enforce health code compliance, and support the smooth flow of equipment, chemicals, and supplies for efficient operations.

Responsibilities

  • Oversee and direct stewarding operations in all outlets while maintaining sanitation and cleanliness of all kitchens, bars, and service areas.
  • Assign and monitor completion of daily cleaning checklists.
  • Monitor collection of trash for Food and Beverage.
  • Ensure chemicals, trash bags, detergents, towels, and other equipment are delivered to and used in proper areas.
  • Organize equipment and supplies for orderly and efficient operations.
  • Maintain health code standards in compliance with local, state, and federal rules, regulations, and laws.
  • Participate in the interview and hiring process for line-level stewards; train team members and temporary labor to Company standards and issue discipline when appropriate.
  • Draft and implement Standard Operating Procedures (SOPs) for equipment, chemicals, and supplies, and train stewards on SOP processes.
  • Prepare schedules based on a 10-day forecast; assess the working pace of team members and reallocate resources based on business need.
  • Maintain dish machine equipment in accordance with manufacturer standards.
  • Walk the service floor, moving between steward service stations to ensure line staff are in assigned areas and that each area is sufficiently staffed.
  • Enforce health code standards and serve as a point of contact for administrative or government agencies during inspections.
  • Oversee staff for monthly deep-clean of scheduled areas.
  • Serve as point of contact for outside vendor relations.
  • Prepare and disseminate shift reports.
  • Safety is an essential function of this job.

Requirements

  • One or more years of related experience required.
  • Prior lead or supervisory experience in a similar role desired.
  • Ability to lead others in the department by mentoring and providing training that results in staff meeting or exceeding guest expectations and delivering a high level of service.
  • Knowledge and practical experience.
  • Good communication skills.
  • Ability to stand for long periods of time.
  • Ability to lift, move, and pull moderate amounts of weight.
  • Ability to work AM, PM, weekend, and holiday shifts as required by operational needs.
  • Experience within a hotel or resort environment.
