Job Description
Hotel Jackson in Jackson, Wyoming is seeking an Executive Steward to supervise stewarding operations across all food and beverage outlets, kitchens, and banquet facilities. This leadership role guides the stewarding team on the floor, upholding sanitation and safety standards, while managing inventory and equipment and coordinating with culinary, banquet, restaurant, and engineering partners to keep service running smoothly on every shift.
Responsibilities
- Oversee daily stewarding operations across all F&B outlets, kitchens, and banquet facilities, ensuring thorough cleaning, proper sanitation, and secure storage of china, glassware, silverware, cookware, and equipment.
- Plan and monitor stewarding staffing and schedules to meet operational demands; identify coverage gaps for the Director and reallocate assignments in real time as needs arise on the floor.
- Support setup and breakdown of banquet and special events, coordinating with the banquet team to ensure stewarding coverage is ready when needed.
- Conduct routine inspections of kitchens, storage areas, and dishwashing operations to verify cleanliness, organization, and compliance.
- Supervise stewarding supervisors and team members on assigned shifts with clear expectations, accountability, and a focus on developing the team’s performance.
- Lead daily pre-shift briefings to align the team on priorities, cleanliness standards, and any event needs for the shift.
- Mentor and develop future stewarding leaders through real-time coaching and a culture that recognizes high standards and strong work.
- Assist with recruitment, onboarding, and training of new team members to reach full competency quickly and understand the standard from day one.
- Support performance evaluations and provide direct, constructive feedback to help team members grow.
- Maintain compliance with all local, state, and federal health regulations at all times, with a non-negotiable emphasis on governance.
- Ensure adherence to HACCP protocols, food safety standards, and sanitation procedures across all stewarding areas.
- Investigate and report safety concerns, equipment issues, and workplace incidents promptly; follow up to ensure corrective action is completed.
- Ensure proper handling, labeling, and storage of cleaning chemicals in line with safety protocols.
- Monitor inventory levels of cleaning chemicals, paper products, and stewarding supplies; flag shortages early and assist with ordering and receiving.
- Coordinate preventative maintenance and timely repairs for dish machines and stewarding equipment to minimize downtime.
- Maintain accurate inventory and purchasing records to support departmental budgeting and cost control.
- Assist in preparing departmental budgets and forecasts in partnership with the Director.
- Analyze labor productivity and stewarding costs, identifying opportunities to improve efficiency without compromising standards.
- Apply a cost-conscious approach to daily decisions around staffing, supplies, and equipment management.
Requirements
- Three to five years of stewarding experience in a hotel, resort, or large-scale food service operation, with one to two years in a supervisory role.
- Experience in a luxury property or Forbes Four/Five-Star environment is strongly preferred.
- Solid knowledge of sanitation, HACCP, food safety regulations, and health code compliance.
- Proven ability to lead a stewarding team on assigned shifts and uphold standards independently.
- Experience supporting high-volume banquet operations is a significant advantage.
- Familiarity with inventory management systems and labor scheduling software is preferred.
- Calm, organized, and physically capable of standing, walking, lifting up to 50 pounds, and working in hot and wet environments across a full shift.
- Bilingual in English and Spanish is strongly preferred.
- Flexible availability, including weekends and holidays as required by the operation.
